Zucchini Mushroom Sauté


1 tablespoon butter
1 cup fresh shiitake mushrooms, sliced
1 sweet onion, sliced thin
1/2 teaspoon dried thyme
1/2 teaspoon paprika
2 cloves garlic, minced
2 cups summer squash, sliced
Salt & Pepper
Grated parmesan cheese


  1. Melt butter in a heavy skillet. Add the mushrooms, onions, thyme, paprika and garlic, sauté 3-5 minute.
  2. Add the squash and sauté about 5 minutes. Season with salt and pepper to taste.
  3. Serve plain or sprinkle with parmesan cheese.
