2 to 3 pounds winter squash, seeded, thinly sliced into wedges
1/2 cup olive oil
1/2 cup brown sugar
1 teaspoon salt, 1 teaspoon pepper
1/2 cup parsley, chopped
1/2 cup pumpkin seeds, toasted
zest of 1 orange
parmesan to grate on top
Heat your grill on high.
Whisk together the oil, sugar, salt and pepper.
Toss the squash wedges with the oil/sugar and grill until caramelized and soft, about 8-10 minutes. To avoid burning the sugar, start your wedges on the hottest part of the grill, char for a few minutes, then move to cooler side.
Remove done wedges and garnish with orange zest, parsley, seeds, and freshly grated parmesan
