Winter Broccoli Salad


1 head of lettuce
Any raw green
1 head broccoli
2-3 beets
2 cloves Garlic,
Orange juice
Sesame oil
Olive oil
Salt and pepper


  1. Steam the broccoli florets and the halved beets together. Take out the broccoli after 1-2 minutes, while still quite crisp, and let cool.
  2. Continue steaming the beets until tender, about 15-20 min.When the beets are finished, cut into bite sized pieces and let cool (put them in the fridge to cool faster).
  3. Add the broccoli, beets, lettuce, and shredded greens (a few leaves of kale is a good choice) and toss with the salad dressing below.


Combine 2 cloves minced garlic, 1/2 cup orange juice, 1 tsp sesame oil, 2 tbsp olive oil, and salt and pepper to taste.

This salad is also great when you have leftover beets in the fridge. Save any unused dressing for another day.
