Wilted Radicchio with Shallots


2 tablespoons butter or avocado oil

2 small shallots, thinly sliced

1 head Castelfranco radicchio (or escarole), roughly chopped into strips

Sea salt

Freshly ground black pepper

1-2 tablespoons aged balsamic vinegar


  1. Melt the butter over medium heat and add shallots. Sauté shallots until they are soft and lightly browned.
  2. Add radicchio and salt and pepper to taste.
  3. After the greens are wilted, add the vinegar and adjust the seasoning with additional salt and pepper if needed.
