Watermelon, Tomato & Corn Salad


½ watermelon, seeded and cut into 1 inch cubes
2 tomatoes, cut into 1-inch cube
2 ears fresh corn, kernels cut away from cob
6 mint leaves, sliced thinly
½ large red onion, thinly sliced
½ cup crumbled feta cheese
2 tablespoons olive oil
1 tablespoons white balsamic vinegar
1 pinch salt, or to taste
1 pinch black pepper


  1. Gently mix watermelon, tomatoes, corn kernels, mint, onion, and feta cheese in a large bowl.
  2. Whisk olive oil, vinegar, salt, and pepper together in small bowl; drizzle over salad and gently toss to coat.
