1.5 cups fresh basil
1/3 cup olive oil
1 cup pine nuts (or walnuts or almonds)
5 cloves garlic
1/3 cup nutritional yeast (available at the Sac Natural Foods Coop in the bulk aisle)
3/4 teaspoon salt
1/2 teaspoon black pepper
Combine all ingredients in a food processor until nuts are ground but the pesto still has texture.
You can also add sun-dried tomatoes, arugula, or replace half of the oil with soy milk.
