Turnips

Turnips are full of a balance of amino acids and contain known anti-inflammatory nutrients such as Vitamin K and Beta Carotene. They can be prepared with a variety of root vegetables or can take the stage alone- And you can even eat the greens!

For a delicious solo dish of Purple Top Turnips:

  1. Clean, Peel, and half or quarter turnips.
  2. In a large pan heat 2-3 tablespoons of butter or margarine with 1 tablespoon of oil and 2 tablespoons of honey.
  3. Add turnips and 2 tablespoons of poppy seeds and sauté until golden brown, about 7-9 minutes.
  4. Toss in about 1 tablespoon Paprika.
  5. Add 3 tablespoons of red wine vinegar and cook until evaporated , about 3-5 minutes. Add chopped dill to taste and enjoy!
