Thai Turkey Lettuce Cups with Fresh Mint

Ingredients:

2-4 little gem heads, leaves separated

½ pound ground turkey

1 tsp. coconut oil

2 cloves garlic, minced

1 tsp.  Red Thai Curry Paste (Thai Kitchen brand is good)

Juice of half a lime

Dash tamari

Handful fresh mint

Handful Bean sprouts

Handful peanuts or almonds, chopped (optional)

Directions:

  1. Separate the gem leaves and rise and dry well.
  2. Sauté the garlic in the coconut oil and add the turkey.
  3. After a few minutes, add the curry paste. Cook until browned and cooked all the way through.
  4. Add the lime juice and tamari.
  5. Place the gems cup side upon a large platter.
  6. Fill with ground turkey mixture and top with bean sprouts, fresh herbs and the chopped nuts.
