Tomato, Peach and Melon Salad with Feta

Ingredients:

1/2 small red onion, thinly sliced

2 peaches, pitted and cubed

1 large heirloom tomato, cubed

1/2 pint cherry tomatoes

1 red slicer tomato, cubed

1/2 small melon, skin removed and cubed

1 tablespoon sherry vinegar

2 teaspoons olive oil

1 teaspoon honey

Pinch of salt and pepper

1/4 cup feta cheese

Fresh basil leaves, chiffonade

Directions:

  1. Add the onion, peaches, tomatoes and melon to a large bowl.
  2. In a small mason jar add the vinegar, olive oil, honey, salt and pepper close and shake until the honey dissolves.
  3. Drizzle the dressing over the salad and gently mix. Toss in the feta cheese and basil. Taste and season with more salt and pepper if needed.
