Tomato Herb Vinaigrette


¼ cup red wine vinegar

½ teaspoon salt

½ teaspoon raw sugar

½ teaspoon black pepper

¼ cup shallots or onion, minced

1 cup olive oil

3 cloves garlic, minced

1 tablespoon fresh thyme, minced

1 tablespoon fresh basil, minced

1 tablespoon oregano, minced

1 cup heirloom tomatoes, dice


  1. Pour vinegar into a quart jar. Add salt, sugar, pepper and shallot. Cover and shake until sugar is dissolved.
  2. Add olive oil, garlic, thyme, basil and oregano.
  3. Cover and shake till mixed thoroughly. Add tomato, cover, and agitate gently.
  4. Serve over fresh chopped greens and enjoy.
