Thai Cucumber Salad


1/3 cup rice vinegar
2 tablespoons granulated agave
½ teaspoon toasted sesame oil
¼ to ½ teaspoon red pepper flakes
½ teaspoon salt
2 cucumbers
3 green onions, sliced
¼ cup sesame seeds, toasted


  1. In a small bowl, combine the rice vinegar, agave, sesame oil, red pepper flakes, and salt.
  2. Set the dressing aside to give it time to blend.
  3. Peel the cucumbers in strips, leaving some on the peel on, and slice the cucumber in thin rounds.
  4. Place the sliced cucumbers in a large bowl.
  5. Add the dressing, sesame seeds, and green onions to the sliced cucumbers.
  6. Stir to combine.
  7. Serve immediately or refrigerate until ready to eat.
