Tasty Cooked Greens


12 cups mixed greens
3 tbsp olive oil
2 tsp paprika
4 large garlic cloves (or equivalent amount)
1 cup chopped parsley
2 tsp ground cumin
1 cup chopped cilantro


  1. Steam the greens until tender, drain and chop into pieces about 1 inch square.
  2. Warm the oil with paprika and cumin over medium heat until they release their fragrances.
  3. Stir in the garlic, finely chopped, then add parsley and cilantro.
  4. Add the greens and cook until any extra moisture has evaporated.
  5. Taste for salt and garnish with lemon.
