½ cup extra-fine bulgur wheat
4 scallions, very finely chopped
1 slicer cucumber, peeled, seeded, very thinly diced
4 firm roma tomatoes, very thinly diced
½ cup fresh mint leaves, very thinly chopped
1 cup chopped flat-leaf parsley, very finely chopped
¼ cup freshly squeezed lemon juice (2 lemons)
¼ cup good olive oil
Salt and pepper


  1. Wash bulgur and then place the in a bowl and soak for 5-7 minutes. Drain very well (use hands to squeeze excess moisture from bulgur).
  2. In a large bowl add the bulgur, onion, cucumber, tomatoes, mint, parsley, lemon juice, oil, 1 teaspoon salt, ½ teaspoon pepper; mix well.
  3. Taste and adjust seasonings and serve; or cover and refrigerate. The flavor will improve if the tabouli sits for a few hours.
