Swiss Chard with Potatoes

Ingredients:

1 pound potatoes, scrubbed and cut into 1-inch cubes
Salt and pepper to taste
¼ cup olive oil
6 cloves garlic, thinly sliced
½ yellow onion, thinly sliced
1 bunch chard, tough stems removed, tender stems and leaves torn into 2-inch pieces
½-1 teaspoon smoked paprika

Directions:

  1. Boil potatoes in salted water until tender, 5-7 minutes. Drain and set aside.
  2. Add olive oil to a cast iron skillet over medium high heat. Add garlic and cook until soft, 1-2 minutes.
  3. Add the onion and tender chard stems and cook until soft, 2-3 minutes.
  4. Add the potatoes and cook stirring occasionally until golden, about 5 minutes.
  5. Stir in chard leaves and cook until wilted. Season with smoked paprika and salt and pepper to taste.
