Sweet Salsa Verde

Ground Cherries - tastes like a cherry tomato injected with mango and pineapple juice, and looks like an orange pearl encased in a miniature paper lantern .

1 pint ground cherries, husked
1 jalapeno , quartered
1 clove of garlic
1/2 -1tsp ground cumin
1/2 tsp salt
1 small onion, coarsely chopped
1 handful cilantro or parsley
juice of 1/2 lime

  1. Preheat oven to 450 degrees. Place the jalapeno and whole ground cherries on a baking sheet.
  2. Bake until the ground cherries start to char (one or two brown or black spots).
  3. Put everything except cilantro in a food processor and blend until combined.
  4. Add the cilantro (or parsley) and pulse once or twice until the larger leaves are broken up.
  5. Serve over grilled chicken, with tortilla chips or any other way that you like to eat salsa verde!
