Sweet Corn Salsa

It's salsa season!! There is nothing more refreshing on a hot summer day than a big bowl of fresh salsa. This has been a favorite of mine this season. I really enjoy it over some scrambled eggs for breakfast.


2 ears corn
1 large tomato
1/2 bunch cilantro
1 small onion
1 hot pepper, or as many as you like


  1. Shave the corn off the cob and leave the kernels whole.
  2. Finely chop the remaining ingredients then mix everything together and salt to taste.
  3. You may find that letting the salsa chill in the fridge for an hour results in a better flavor.
