Summer Squash and Tomatoes


2 tablespoons olive oil
1 tablespoon garlic, minced
2 cups summer squash, chopped
1 cup cherry tomatoes, halved
2 tablespoons fresh basil, cut in ribbons
1/4 teaspoon pepper
1/8 teaspoon salt


  1. In a large skillet heat oil over medium high heat. Add garlic and sauté until fragrant. Add squash and sauté until tender, about 4-5 minutes.
  2. Add tomatoes, basil, pepper and salt. Reduce to medium heat; cook for 1-2 minutes or until heat through.

Serves: 4
