a vegetarian’s delight for the Holidays
1 Pie pumpkin or other roundish Winter Squash (Hubbard work well too)
Cut off the top, remove seeds, etc, and stuff with a flavorful stuffing. I like capers, olives or cranberries for lots of flavor
Now bake that thing. This might take a long time, anywhere from two to four hours, depeding on the size of the pumkin. But the display is well worth the wait.
