Stuffed Pear Crisp


4 large ripe pears, halved and cored

1/3 cup flour of your choice

1/4 cup brown sugar or coconut sugar

1/4 cup coconut oil

1/2 teaspoon vanilla extract

1/2 cup old fashioned oats

1/4 cup pecans

1 teaspoon  ground cinnamon

½ teaspoon ground ginger

¼ teaspoon ground cloves

⅛ teaspoon ground nutmeg

Pinch of salt


  1. Preheat the oven to 350F. In each pear form a cavity for the filling. Place pears on a baking dish and spray with cooking spray. Set aside.
  2. Add flour, sugar, unmelted coconut oil and vanilla in the bowl of a food processor. Pulse until the mixture resembles small crumbs.
  3. Add the oats, pecans, spices and salt. Process for about 20 seconds longer, or until well-combined.
  4. Fill each pear cavity with a couple spoonfuls of the topping. Place evenly in the baking dish. Bake for 32-35 minutes or until pears are tender.
