Storing and Freezing Delicata

Ingredients:

Delicata squash

Freezer storage bags

Baking sheet or dish

Directions:

Storage tips: Winter Squash is best stored between 55-65 degrees, however, Delicata squash does not store quite as well as heartier varieties like Acorn and Butternut. Place in a cool dry room in your house (do not refrigerate) and it should last 3 months.

How to preserve: Best frozen after cooking. Heat oven to 400 degrees, cut squash in half, scoop out seeds and place face down on a baking sheet or dish. Add ½ inch of water to the pan and roast for 20-30 minutes or until a fork pierces easily through the skin. Let cool, cut as desired, place in freezer storage containers, label and freeze. Delicious and easy to thaw and use in puréed applications or as a simple side dish.
