Summer Squash Mushroom Sauté


2 tablespoons butter
2 cups fresh shiitake mushrooms, stems removed and sliced
1 sweet onion, sliced thin
1 teaspoon dried thyme
1 teaspoon paprika
4 cloves garlic, minced
3 cups summer squash, sliced
¼ cup fresh basil, chopped
Salt & Pepper
Grated parmesan cheese


  1. Melt butter in a heavy skillet. Add the mushrooms, onions, thyme, paprika and garlic, sauté 3-5 minute.
  2. Add the squash and sauté about 4-5 minutes until crisp tender. Add the basil, turn off heat and season with salt and pepper to taste.
  3. Serve plain or sprinkle with parmesan cheese.
