Spring Mix Salad with Basil Vinaigrette



¼ cup olive oil

½ cup lemon juice

2 tablespoons fresh basil, finely chopped

1 tablespoon white balsamic vinegar

1 garlic clove, minced

1 teaspoon honey

½ teaspoon salt

¼ teaspoon pepper


1 bag spring mix, large pieces chopped

½ fennel bulb, very thinly sliced

6 strawberries, cut in half and thinly sliced

¼ cup scallions, chopped

¼ cup fresh mozzarella cheese, cubed


  1. Combine all the dressing ingredients in a small mason jar. Put the lid on and shake.
  2. Add the spring mix to a medium salad bowl. Pour a small amount of dressing to the spring mix and toss to coat.
  3. Add the fennel, strawberries, scallions and mozzarella. Gently toss. Add desired amount of dressing and gently toss again.
