Spinach and Kale Saag with Goat Cheese


2 small hot peppers, seeded, minced
1 tablespoon cumin seed
4 cloves garlic
2 tablespoons turmeric
2 tablespoons olive oil
4 large bunches kale, chopped small
1 to 2 pounds spinach, chopped
2 teaspoons ground coriander
a splash of water
salt and pepper to taste
4 oz goat cheese


  1. Heat olive oil in a large skillet then add cumin, garlic, turmeric and peppers.
  2. Saute for 3-4 minutes until aromatic.
  3. Add all greens, stir to distribute seasonings, and keep stirring as the greens wilt down to ensure even cooking.
  4. Add coriander and a pinch of salt, a splash of water, and cover the skillet with a lid. Steam for about 10 minutes until the greens have reduced and turned deep green. Season.
  5. Scoop some cheese on top, replace lid and warm cheese for a minute or two, then serve hot.
