Spinach & Green Garlic Soup


1/4 cup olive oil
2 leeks, cleaned and sliced
Salt and pepper
3 cloves garlic, minced
1 bunch kale chopped
1 bunch clip top garlic, sliced
2 cups spinach, chopped
1 quart vegetable broth
Grated smoked Gouda cheese
Lemon oil


  1. In a large pot over medium low, heat olive oil and leeks with a pinch of salt and pepper and cook until tender, about 5 minutes.
  2. Add minced garlic and cook 1 minute. Add the vegetable broth and bring to a boil.
  3. Add kale, clip top garlic and spinach. Cook just until kale and spinach are tender. 4. Use an immersion blender and blend until smooth.
  4.  Add another pinch of salt and pepper, sprinkle with grated smoked Gouda cheese and drizzle with lemon oil.
