Spicy Spring Salad


1 bunch radishes, stems, leaves, and ends trimmed off
4-5 turnips
1 cucumber, halved and sliced
4 Tbsp rice wine vinegar
1 Tbsp sugar
4 Tbsp chopped fresh mint
Salt and pepper to taste


  1. Finely dice the radishes (the White Icicle variety in your box this week have a delicious, spicy kick), turnips, and cucumber.
  2. In a separate bowl, mix the remaining ingredients and 5 tablespoons water. Add the veggies, toss and chill 1/2 hour before serving.
