2 pounds carrots, scrubbed clean and cut into 2-inch pieces
3 tablespoons olive oil
½ teaspoon salt
½ teaspoon pepper
½ teaspoon cumin
¼ teaspoon chili powder
¼ teaspoon paprika
1/8 teaspoon ground ginger
1/8 teaspoon cinnamon
Dash of cayenne pepper
Directions:
Preheat oven to 400°. In a large bowl toss the carrots with oil.
In a small bowl mix the seasonings then sprinkle over the carrots. Toss well to coat.
Arrange the carrots in a single layer on a large baking pan coasted with cooking spray. Roast for 25-30 minutes or until lightly browned and crisp tender, stirring occasionally.
