2 tablespoons olive oil
5-6 medium potatoes, scrubbed and cut into small cubes
1 onion, coarsely chopped
Salt and pepper to taste
1 teaspoon garlic powder
6 cloves garlic, sliced
4 sage leaves, minced
Heat oil in a cast iron skillet over medium heat until hot. Add the potatoes and onion all at once and turn heat up to medium high.
Sprinkle with salt, pepper and garlic powder and toss until all the veggies are coated with oil. Let sit uncovered, and without turning, in order to brown underside, then give it an occasional stir to turn and cook all sides of the veggies.
Add the garlic and sage.
Continue cooking until the potatoes are tender and you reach the desired level of browning, adjusting the heat as needed.
