Sautéed Shiitake Mushrooms & Chard


2 tablespoons unsalted butter
½ pound of shiitake mushrooms, sliced 1/4-inch thick
1/4 teaspoon salt
½ onion, diced
2 cloves garlic, minced
2 large bunches of Swiss chard rinsed, patted dry, large ribs removed, leaves roughly chopped
Grated Parmesan cheese


  1. In a large wok melt the butter on medium-high heat. Stir in the sliced mushrooms and diced onions. Sprinkle with salt.
  2. Once the mushrooms are beginning to brown and have given off some water, add the garlic and cook for about 30 seconds. Add the chopped chard leaves a handful at a time to the pan and toss with the mushrooms. Once the chard leaves have wilted, remove from heat and cover the pan. Let the chard leaves steam in their residual heat for a couple minutes.
  3. Once chard is done sprinkle generously with grated Parmesan cheese. Serve immediately.
