Sesame Ginger Zucchini

Ingredients:

3 cloves garlic, minced
1 tablespoon fresh ginger root, minced
2 tablespoons tamari or soy sauce
¼ to ½ teaspoon crushed red pepper flakes
¼ teaspoon black pepper
1 tablespoon sesame seeds, toasted
1-2 tablespoons toasted sesame oil
1 medium yellow onion, chopped
4 cups zucchini, sliced in half moons
Salt to taste (if needed)
Scallions, thinly sliced

Directions:

  1. In a small bowl, mix together the garlic, ginger, tamari, crushed red pepper, black pepper and toasted sesame seeds. Set aside.
  2. Add the toasted sesame oil in a large non-stick wok over medium high heat. Add the onions and cook for a couple minutes, until just beginning to soften.
  3. Stir in the zucchini and cook for 2 minutes.
  4. Add the reserved sauce and cook for 4 to 5 more minutes or until soft enough for your liking.
  5. Sprinkle with scallions and serve.
