Sauteed Peas

Fresh spring peas are a good source of protein, B vitamins and a variety of minerals. They help control blood sugar levels and may aid in preventing blood clots. Fresh from the pod, they are like nature’s candy, but they can also be sautéed.

Ingredients:

2 cups peas
1 Tablespoon butter
1 lemon, zested
Salt

Directions:

  1. Heat a pan over medium heat. Melt butter, add the peas and season with salt. Cook for 2-3 minutes, let peas cool for a few minutes, and toss the peas with the juice and zest of the lemon. Stir to combine.
  2. To zest the lemon, use a vegetable peeler to peel off thin strips, then finely chop – or use a microplane grater.
