Sautéed Kale with Sweet Peppers and Shallots

Ingredients:

1 bunch Dino kale, stems removed and leaves chopped
2 tablespoons olive oil
⅓ cup shallots, diced
1 cup sweet pepper, sliced
4 cloves garlic, thinly sliced
¾ teaspoon sea salt
½ teaspoon black pepper
1 teaspoon balsamic vinegar

Directions:

  1. Heat a large sauté pan over medium heat. Add the olive oil. Once hot, add the shallots and sauté until softened, about 1 minute.
  2. Add the peppers and sauté until crisp-tender, 1 minute.
  3. Add the garlic, sauté and cook until fragrant, 1 minute.
  4. Add the kale in handfuls at a time; once wilted, add more. Cook until all the kale wilts, about 6 minutes.
  5. Add the salt and pepper, stir to combine, and cook about 5 minutes or until tender.
  6. Add the balsamic vinegar. Stir to combine.
  7. Taste and add more seasonings as desired. Transfer to a bowl and serve hot.
