Sautéed Beets, Greens and Green Garlic

Ingredients:

3-4 beets, peeled, quartered and sliced thin
2 tablespoons olive oil
1 large onion, diced
3 small bulbs green garlic, chopped
1/2 teaspoon cumin seeds
1/4 teaspoon turmeric
1/4 teaspoon red chili flakes
Salt to taste
2 bunches greens (kale, chard, beet greens), stemmed and chopped

Directions:

  1. Steam beets until fork tender, about 15 minutes. Drain and set aside.
  2. Heat oil in pan on medium heat and add the cumin seeds. Sauté for 1-2 minutes.
  3. Add the onion, green garlic, turmeric, chili flakes and a pinch of salt. Sauté until onions are soft, about 4-5 minutes.
  4. Add the green to the onion mixture and sauté until wilted, about 5-8 minutes.
  5. Add the steamed beets to the greens, mix until combined and add salt to taste.
