Sauteed Asparagus & Spring Garlic


2 tablespoons olive oil
1 bulb shallot, sliced
1 bunch asparagus, woody ends snapped off and cut on the diagonal ½-inch slices
3 stalks green garlic, chopped
Salt and pepper to taste
Pinch of red chili flakes
Lemon wedges, for serving


  1. In a large sauté pan heat oil over medium high heat. Add the shallots and sauté until softened, for about 3 minutes.
  2. Add the asparagus, green garlic, salt, pepper and pinch of chili flakes. Sauté uncovered for 4-6 minutes, or until asparagus is crisp tender.
  3. Transfer to serving dish and squeeze lemon juice over the top.
