Salanova Green Salad


6 cups Salanova salad mix, rinsed and dried
4 tablespoons mixed fresh herbs such as flat-leaf parsley, mint, cilantro and/or celery leaves, finely chopped
1 apple, cored and finely chopped
2-3 celery stalks, finely chopped
¼ cup walnuts, toasted and chopped

¼ cup extra virgin olive oil
½ lemon juice
1 garlic clove, crushed
salt and pepper


  1. Add the salad mix and the chopped herbs to a salad bowl and mix with tongs.
  2. Add the apple, celery and walnuts to the salad.
  3. To make the dressing, mix together the oil, lemon juice, garlic and salt and pepper in a small bowl. Taste and add more oil or lemon juice if necessary.
  4. Just before serving, whisk the dressing; pour over the salad, lightly toss and serve.
