Rosemary and Garlic Roasted Golden Beets


2 tablespoon garlic flavored olive oil
3 cloves garlic, minced
1 tablespoon rosemary, finely chopped
salt and black pepper to taste
6 medium golden beets peeled and cut into 1-inch chunks


  1. Preheat the oven to 400 degrees.
  2. Mix together the olive oil, garlic, rosemary, salt and pepper.
  3. Toss the beets with the herb olive oil mixture in a bowl.
  4. Spread in a single layer on a baking sheet, preferably coated with aluminum foil to make cleanup easier, and roast for 35–40 minutes or until the beets are fork tender and golden. Stir once or twice during roasting to make sure they cook evenly.
