Root Vegetable Salsa

Ingredients:

carrots
radish
beets
onions
basil
olive oil
vinegar
fresh herbs of choice
lemon or lime

Directions:

  1. Dice carrots, radish, beets, onions and basil.
  2. Mix and then add olive oil and splash of your favorite vinegar (optional).
  3. Season to taste with salt and pepper and add any other herbs you enjoy (oregano, thyme, cilantro, mint).
  4. A squeeze of lemon or lime will give it a nice finish.
  5. This salsa can be used as a side dish, to top any grains you are cooking or try it in a collard green wrap.
