Roasted Tomato and Pepper Salsa

Salsa is an absolute necessity in the summer. It’s a perfect snack food or complementary condiment to any meal! Here’s a quick and easy recipe for roasted salsa.

Ingredients:

tomatoes, (reds, heirlooms, or both)
sweet peppers
onions
hot peppers
lemon juice
olive oil
salt to taste
chips

Directions:

  1. Take your tomatoes, (reds, heirlooms, or both), sweet peppers, onions, and hot peppers and quarter them. Remove the seeds of the hot peppers if you want to keep the salsa mild.
  2. Peel garlic and leave cloves whole.
  3. Slice your onion about 1/2 inch thick.
  4. Place all the veggies in a baking pan and broil, about 4 inches from heat. Turn occasionally until lightly charred on all sides, about ten minutes.
  5. Allow to cool ten minutes. Place all roasted veggies in a blender with the juice of a lemon, some olive oil, and salt to taste. Get a bag of chips and enjoy!
