Roasted Sweet Potato Coins

Sweet potatoes are packed with nutrition, easily digestible, an excellent source of vitamin A (also known as beta carotene),potassium and vitamin C. Also known for their ability to eliminate heavy metals from the body.


1 sweet potato, sliced into ¼ – inch rounds
1 Tablespoon oil (olive oil and melted coconut oil are good choices)
1 teaspoon sea salt


  1. Preheat oven to 325°.
  2. In a bowl, combine sliced sweet potato, oil, and salt.
  3. Toss well to coat the sweet potato slices evenly with oil and salt.
  4. Spread sweet potato slices on a baking sheet and bake until tender, 20-30 minutes.
