Roasted Roots with Orange & Parsley


Carrots and Parsnips, peeled, trimmed and cut diagonally into 1-inch thick pieces
Beets, peeled and cut into wedges
6 garlic cloves, unpeeled
1 bunch parsley, chopped
1 orange, juiced
Olive oil


  1. Preheat oven to 400 degrees.
  2. Mix the vegetables, garlic, parsley and orange juice in a large bowl.
  3. Season veggies well with salt and black pepper, drizzle generously with olive oil, and toss them with your hands to coat them evenly. Transfer to a large baking dish.
  4. Put the baking dish in the preheated oven and cook, stirring the vegetables occasionally, until they are tender and golden brown, about 45 minutes.
