Roasted Potatoes and Beets with Balsamic Glaze


3-4 beets, cut into chunks
2 potatoes, cut into chunks
1 yellow onion, cut into chunks
3-4 cloves of garlic, coarsely chopped
¼ cup fresh parsley, chopped
1 tablespoon rosemary, chopped
3 tablespoons balsamic vinegar
½ cup olive oil
Salt & Pepper


  1. Toss beets, potatoes, onion, & garlic with olive oil, balsamic, rosemary, salt and pepper.
  2. Roast at 400 degrees for about 1 hour or until edges are crispy.
  3. Top with chopped fresh parsley.
