Roasted Garlic with Fresh Herbs

Roasted garlic is amazing! You can add it to mashed potatoes or pasta, make roasted garlic hummus, smear it on toasted bread or eat it as a snack.

Ingredients:

garlic bulbs

olive oil

salt and pepper

thyme and/or rosemary

Directions:

  1. Cut the top and bottom off of your garlic bulbs (fresh or cured).
  2. Place the garlic bulbs into a baking dish and drizzle olive oil over the bulbs, season with salt and pepper and sprinkle with fresh chopped thyme or rosemary.
  3. Cover the dish tightly with foil and bake for 45-60 minutes at 350 degrees, until the cloves are golden and soft like butter.
  4. When cool enough to handle, from the bottom up, squeeze each head to push out cloves (peel skins from any completely enclosed cloves).
  5. Transfer the roasted cloves of garlic and cooking oil to an airtight container. Garlic will keep, refrigerated, up to 2 weeks.
