Roasted French Breakfast Radishes with Chive Butter


1 pound French breakfast radishes, trimmed and halved if large
1 tablespoon olive oil
Kosher salt
2 tablespoons unsalted butter, softened
1 tablespoon fresh chives, thinly sliced
2 teaspoons whole-grain mustard


  1. Heat the oven to 400°F.
  2. Toss the radishes with the oil and ⅛ teaspoon salt.
  3. Spread on a large rimmed baking sheet lined with foil, and roast for 20 minutes, or until tender and light golden.
  4. Meanwhile, in a large bowl, mash together the butter, chives, and mustard.
  5. Transfer the radishes to the bowl, and toss to coat in the butter mixture. Season to taste with a good pinch of salt, and serve hot.
