Roasted Eggplant

Eggplants are versatile – they can be fried, boiled, roasted, stuffed and sautéed. It is low in calories, and its high water content makes it good at cleansing the blood. Eating eggplant can help protect arteries damaged by high cholesterol.

Ingredients:

1 eggplant, cut into ½ inch thick slices
1 Tablespoon olive oil
Salt
Pepper
Basil, torn into large pieces (optional)

Directions:

  1. Preheat oven to 400˚. Brush each side of eggplant with oil and season with salt.
  2. Cook in the oven for 20 minutes, then place eggplant in a bowl. Add basil, freshly ground pepper and serve.
  3. Optional idea: chop the eggplant and serve on bread or crackers
