Roasted Cherry Tomatoes

These little tomatoes are a great snack as is – kids love them that way – but they can also be cooked. Studies have shown that eating a diet including lots of tomatoes can reduce the risk of many kinds of cancer.


1 pint basket of cherry tomatoes, halved
1 Tablespoon olive oil
Basil, finely chopped (optional)


  1. Preheat oven to 375˚.
  2. Toss tomatoes in oil to coat. Season with salt.
  3. Place tomatoes cut side up on a baking sheet in one even layer and cook for 7-8 minutes.
  4. Move them to a bowl, add freshly ground pepper and basil, and stir to combine.
  5. Serve over pasta or spread on toasted bread.
