Roasted Beets with Oil and Vinegar

Beets help cleanse the blood and contain powerful nutrients that can ward off cancer. They also promote healthy digestion. Don’t forget to eat the greens, too – chop them up and sauté them in olive oil with finely chopped garlic.

Ingredients:

2 lbs beets, greens removed, and scrubbed clean
1 T. extra virgin olive oil
3 T. red wine vinegar
1 T. seasoned rice vinegar

Directions:

  1. Preheat oven to 350˚. Put beets in a baking dish with a half inch of water.
  2. Cover tightly with aluminum foil and bake 45-55 minutes or until tender when pierced.
  3. When cooled, rub the skin off with your hands, and cut beets into chunks.
  4. Toss beets in olive oil, then add the vinegars and some pepper to taste.
