Roasted Baby Potatoes with Butter & Parsley

Ingredients:

1 1/2 pounds baby purple potatoes
Drizzle of olive oil
Garlic powder, to taste
Sea salt and freshly cracked pepper, to taste
4 tablespoons fresh parsley, chopped
2 tablespoons butter

Directions:

  1. Preheat the oven to 400 degrees. Coat a baking dish with cooking spray then add the baby potatoes. Drizzle the potatoes with olive oil then season with garlic powder, sea salt and freshly cracked pepper, to taste.
  2. Place into the oven and roast for 10 minutes then toss them. Continue to roast for an additional 10-15 minutes or until tender and cooked through.
  3. Toss the roasted potatoes with the butter and freshly chopped parsley until evenly coated. Serve immediately.
