(Recipe from Gourmet) Acorn squash is roasted to coax out its subtle sugars before being mixed with citrus juice, chile, and cilantro.
2 acorn squash
1 garlic clove
1/2 teaspoon black pepper
1 1/2 tablespoons fresh lime juice, or to taste
1 teaspoon salt
1 to 2 teaspoons finely chopped hot red chile
6 tablespoons olive oil
2 tablespoons chopped fresh cilantro
