Raw Cauli Mashed ‘Potatoes’

A cool twist on a down-home favorite!


Have on Hand:
1 head raw cauliflower, roughly chopped
¼ cup chopped walnuts
¼ cup olive oil
1-2 cloves garlic
2 TBS nutritional yeast or grated Parmesan cheese (optional)
1 tsp sea salt
chopped fresh parsley, for garnish


  1. Combine all ingredients, save parsley, in a food processor and blend until light and fluffy.
  2. Top with parsley and serve.
