1 shallot, minced
2-3 tablespoons white or golden balsamic vinegar
2-3 watermelon radishes, very thinly sliced
¼ cup pistachios, chopped
¼ cup goat cheese, crumbled
3 tablespoons fresh chives, minced
Place minced shallots in a bowl with the vinegar and add a pinch of salt. Set aside.
Arrange the radish slices on a platter and season slightly with salt.
Cut off the end of each orange and squeeze some over the radishes, then discard. Remove the rest of the peel from the oranges. Cut in between the membranes to remove each slice. Squeeze the remaining membrane all over the radishes.
Scatter orange slices over the radishes.
Scatter the pistachios and goat cheese over the radishes and oranges. Pour the macerated shallots and vinegar over the top.
Scatter chives over the top and let sit a few minutes before serving.
