Radish, Carrot & Kohlrabi Bundles


2 carrots, sliced into julienne (about 1 cup)
6 radishes, trimmed and sliced into julienne (about 1 cup)
1 kohlrabi, peeled and sliced into julienne
1 cup packed fresh mint leaves
2 tablespoons rice-wine vinegar
Coarse salt and freshly ground pepper
1 small head lettuce, leaves separated


  1. In a medium bowl, combine radishes, carrots, kohlrabi, and mint.
  2. Add vinegar; season with salt and pepper. Toss gently to coat.
  3. Place a small handful of vegetable filling on a lettuce leaf.
  4. Fold sides over filling, and roll up to make a bundle.
  5. Repeat with remaining ingredients.
  6. Serve chilled or at room temperature.
